After retiring from the US Navy and working many different jobs. I saw the need for some good southern bbq here in the North Central IL Area. A few years back I had some buddies of mine start raving about a bbq sandwich they like to get in a local ice cream place. It was a manwich. Though it was very very good, it was not bbq in the true sense. I told the guys that I would show them what real bbq was all about. Pulled pork, brisket, ribs etc. I threw a party at my home and prepared the meat in the pit and then made my homemade bbq sauce. They were absolutely stunned and told me I needed to open a restaurant! If I could cook like that I would be successful. After a year of soul searching and coming up with a business plan.
